Vegan Sloppy Joe Dish

Sort of a new take on vegan sloppy joe’s. This recipe has been passed down in my family for generations. My Fathers Grandmother (my Great Grandmother, for those of you who are sticklers) had a friend named Bessie. Well, ol’ Bessie would whip this slightly gloppy looking dish up every time my Grandmother would come over and it became a family favorite.

Peppers, Onions and Tomatoes cooked slowly together and served with corn and over red potatoes. My version of it adds Griller Crumble as a protein to make it a more balanced meal (no offense Grandma.)

Prep Time: 20 Minutes
Cook time: 2-3 Hours
Serves: 6 (very hungry vegans)

You will need:

  • 3 Large Green Peppers
  • 2 Large Yellow Sweet Onions
  • 3 Cans Stewed Tomatoes (Not the Italian kind)
  • 1 Clove Garlic (Minced Finley)
  • Salt and Pepper to taste

On the Side:

  • 2-3 Pounds Red Potatoes (In bite sized chunks)
  • 4-6 Servings fresh or canned Corn
  • 1 Bag Morning Star Farms Griller Crumble (thawed and heated up for a minute)

Directions:




  1. First Things first- prep work. Cut the potatoes and put then in a pot. Cover with cold water and set aside for cooking in the future. Now thinly slice the onions and peppers and put in a large pot (or slow cooker). Salt and pepper and turn on Hi.

  3. Before the pot gets too hot, add one can of stewed tomatoes. I guess you could use fresh tomatoes. I never have. Because that’s just not the way Bessie taught my Grandmother to do it, but give it a go, you never know! Open up another can of tomatoes and just pour in the juice. Leave the tomatoes for later. Let the mix come to a boil and turn down to low. Not low low, just slightly low.

  5. After about a half hour, add the rest of the tomatoes and mix all together. Add the garlic and a little more salt and pepper. Continue to cook for at least 1 hour, covered and stirring occasionally. The longer this cooks, the better it is. When you are about a half hour away from serving, turn on the potatoes and cook until they are perfect for you (some people like them still crunchy- or really soft. It’s up to you). When plating, layer potatoes, griller crumbles and then the ‘Mess’. Then, Corn goes on the side and you can enjoy!

Variation:

Use Italian stewed tomatoes and a few more herbs and serve over your
favorite Pasta. Also try the above recipe with 3 tablespoons of soy
sauce and serve over rice with sauteed tofu.
