
Hawaiian Vegan Smoothies - Serves 2
In a recent trip to the Islands, I discovered right in the heart of the biggest tourist trap in America, a vegetarian/vegan restaurant that served the most amazing tropical smoothies. I took the recipe home with me as my souvenir and added a little of my own vegan flare. You can make just about any kind of fruit smoothie you like, but this combo will transport you right to the islands (without the 8 hour flight).
What you’ll need:
- 2 Large chunks of fresh Pineapple
- 5 medium fresh Strawberries (Frozen works well, too. Just use less ice!)
- 2 Tsp. Honey (A lot of vegans opt not to use honey, so you could also
use maple syrup or no sweetener at all.) - 1/3 Cup Silkin Tofu
- 1 Cup Ice
- 2 Cups Cold Water
Makes 2 smoothies.
Here’s how to make the smoothie:
- If you don’t have a smoothie maker, use a blender. Just make sure the ice is completely ground up. You don’t want to be chewing on large chunks.
- Put ice and water in first. Blend for a few seconds before adding fruit. Once the strawberries and pineapple are in, add the tofu and the honey (or not!) on top. Blend on high for about 30 seconds or until smooth.. hence the name smoothie. Pour into your favorite glass and drink right away.
